For the first time, relationship between equilibrium moisture content and water activity is reported for desorption process in pork liver. that purpose, a standardized conductivity hygrometer was used at four different temperatures (0, 10, 30 50 °C) over wide range of (0.999–0.103). Five models frequently found literature (GAB, Oswin, Henderson, Hasley Ratti) were considered purposes describing experimental desorption. The GAB model emerged as best option (explained variance 96.6%) physical mathematical description isotherms computed isosteric heat, entropy Gibbs energy illustrated high water-sorbent affinity, because considerable availability strong sorption sites low contents. isotherms, modeling results, are essentials optimal design drying liver, which necessary step further research addressing extraction protein fraction from dried product. Extraction isolation liver could be reasonable strategy considering demand materials high-environmental impact meat industry.
